Using this model we calculated the iron absorption from daily menus with varying amounts of enhancers and inhibitors. From these calculations we conclude that the presence of sufficient amounts of iron absorption enhancers (ascorbic acid, meat, fish, poultry, as present in most industrialized countries) overcomes inhibition of iron absorption from even large amounts of tea.
Knowing how iron absorption takes place can be helpful in determining how to best maximize your iron intake by being mindful of the nutrients you combine. If you are a vegetarian or avoid red meat, for example, you’ll need to maximize the amount of non-heme (plant based) iron your body will absorb.
These compounds also chelate iron, but prevent its uptake by the absorption machinery (see below). Phytates are prominent in wheat and some other cereals, while tannins are prevalent in (non-herbal) teas. Absorption enhancing factors are ascorbic acid and meat, fish and poultry; inhibiting factors are plant components in vegetables, tea and coffee (e.g., polyphenols, phytates), and calcium. After identifying these factors their individual impact on iron absorption is described.

Once absorbed into the enterocyte, the majority of the ferrous iron is converted to mucosal ferritin.2 In a patient with iron deficiency, iron absorption into the basolateral side is increased because hepcidin (which is released from the liver) is decreased and thereby not able to inhibit ferroportin 1 activity.11 Interestingly, once ferrous
Vitamin C and heme iron Bran, grains, legumes, and nuts contain substances known as phytates. Phytates may interfere with the absorption of iron and other nutrients if consumed in large Dietary factors inhibiting iron absorption. Calcium: Calcium does inhibit both non- heme iron and heme iron absorption. Calcium inhibits the absorption of both (15), who found that pectin, but not cellulose, inhibits the absorption of inorganic iron in patients with idio- pathic hemochromatosis.
Whereas poor iron intake, or impaired absorption, may lead to anemia, too [25] Since dairy products contain lactoferrin, milk also inhibits the absorption of iron.

Caffeine in coffee and theine in green tea and black tea are iron absorption inhibitors, reducing uptake of the mineral. INHIBITORS OF IRON ABSORPTION Phytate. In plant-based diets, phytate (myo-inositol hexakisphosphate) is the main inhibitor of iron absorption. The negative effect of phytate on iron absorption has been shown to be dose dependent and starts at very low concentrations of 2–10 mg/meal (6, 7). Using this model we calculated the iron absorption from daily menus with varying amounts of enhancers and inhibitors.

Vitamin C, also known as ascorbic acid, is a water-soluble vitamin thought to increase the absorption of nonheme iron. In addition, vitamin C is also thought to counteract the effects of dietary phytates and tannins, which are known inhibitors of iron absorption. More iron is also absorbed in cirrhosis, portacaval shunts and some forms of pancreatic insufficiency. Administration of cobalt and erythropoietine and the later stages of pregnancy.

Unlike other inhibitors of iron absorption, calcium might reduce the bioavailability of both nonheme and heme iron. However, the effects of enhancers and inhibitors of iron absorption are attenuated by a typical mixed western diet, so they have little effect on most people’s iron status. Several food sources of iron are listed in Table 2.
Making dietary changes is an important step in providing iron that the body needs. One of the best ways is to improve one’s dietary intake by consuming food that help increase iron intake (called “iron enhancers”) and by avoiding lining cells.

Polyphenolic compounds are very strong Inhibitors of non-heme iron absorption, as they form insoluble complexes with ferrous iron. Patients with hereditary hemochromatosis (HH) have an increased intestinal non-heme iron absorption due to a genetic mutation in the regulatory pathway, leading to excess iron … 2007-03-09 Absorption of iron through Western-type diets can be inhibited to some degree by a number of chemical micro elements common in food. There is a list of some of main inhibitors which can contribute to development of iron deficiency. Hutchinson C, Geissler CA, Powell JJ, Bomford A.
